Happy day before Friday!
Tonight’s dinner was delicious, aromatic, and I remembered to take pics, so I thought I would share with you!
What You Need:
- 3 boneless skinless chicken breasts, cut into bite sized pieces
- 2 T lemon juice
- 2 cloves minced garlic
- 1/2 medium onion, chopped
- 1/2 t dried oregano
- 1 1/2 t garlic powder
- 1/2 t onion powder
- 3/4 c chicken broth
- 4 large Roma tomatoes, chopped
- 5 large leaves basil, chopped
- s/p to taste
What You Do:
In a non-stick pan, cook chicken in lemon juice until it just starts to brown and then add in the chopped onion.
Add garlic, dried seasonings, and chicken broth.
Let simmer a few minutes, then add in tomatoes and basil.
Add salt and pepper to taste, and more garlic powder if needed. Cook until tomatoes are soft.
If you’re Boyfriend, serve it atop mashed potatoes with salad on the side.
If you’re me, eat it with a side of salad only.
